No idea what banana wine would be like, but the banananana liqueur I've tasted has been over-sweet. I wonder if the wine would make a good dessert wine?
You just adjust the amount of sugar you put in for the %alc the yeast can make so that no sugar's left when it's done, and you get dry. A lot of the weirder liquers are made too sweet.

I didn't know that. The only time I've been involved with the making of anything like that it was my mother's somewhat deadly blackberry 'wine', which used the natural yeast of the fruit and a great deal of sugar. She added brandy to it one year. Which turned out to be a Bad Thing.

Makes sense, though I didn't know that was how it was done.
The nana stuff I tried was more like nana-fritter-in-golden syrup. Ugh.
