We were reduced to 'real' wine, last Sunday dinner. Mind, that's only coz I didn't want to disturb the symmetry of the home-made rack, and the mead and plum are being a little tardy in clearing. The mead'll be ready this Sunday, and at least one of the plums gets bottled next week whether it's crystal or not. In about a month, when the elderberry gets bottled, we can start on the "hooray it's a year old at last" stuff.
We drink 3 bottles a week, not counting special events. The STWC deliver 72 a year. Shortfall: 84, or 14 demijohns-worth. It'll get drunk!
I rarely bother with gravity readings, putting my trust in the recipes I cull from the net and my books. None of it's been puny, so far. One or two have been a wee bitty bit strong so might have the sugar cut back a bit next time around.
